A Recipe From Allington W.I.

200g (8oz) S.R. Flour
100g (4oz) butter
100g (4oz) caster sugar
150g (6oz) sultanas
2 medium eggs
75ml (5Tbsp) milk
1 eating apple (large) cubed
1lb loaf tin lined and greased
Rub butter and flour together until fine breadcrumbs
Add sugar and apple and sultanas
Mix to a batter with eggs and milk with wooden spoon – do not beat
Transfer to prepared tin.
Bake at 180C (gas mark 4) for 1.5 – 1.75 hours
This cake, I always find, is better after a day or so.
